The title makes these sound a bit like candy, but they’re made with great ingredient choices and are the perfect little mid-day hunger-buster.
Brown Sugar Cinnamon Energy Bite Ingredients
- 2 cups rolled oats
- 2 cups moist pitted medjool dates
- 2 tbsp pure maple syrup
- 2 tbsp ground cinnamon
- 1 tbsp brown coconut sugar
- 1/4 tsp chia seeds
- 1/4 tsp sea salt
Energy Bites Directions
Add oats to your food processor and pulse until powdery
Add in Medjool dates, maple syrup, 1 TBSP of cinnamon, chia seeds, and sea salt, and pulse until the mixture is sticky. You should be able to roll this mixture into a ball. If it’s too crumbly and dry, add 1 tbsp of water and pulse again. If it’s too wet, add 1-2 TBSP of oats and pulse again.
Roll dough into 1” balls
Sprinkle the remaining 1 TBSP ground cinnamon and 1 TBSP Coconut sugar onto parchment, roll each ball into the ingredients lightly.
Store in your refrigerator in an airtight glass container for 5 days
If your dates are dry, soak them for 10-15 minutes in cool water, drain and pat lightly with a towel.
